Olive oil mousse

For mousse lovers that are looking for a healthier option.

This mousse, in addition of being delicious, is a little thicker, as it completely replaces the butter with olive oil.


Dark chocolate (70% cocoa) for cooking – 100g

Sugar - 2 tbsp

Eggs - 6

Olive oil - 25ml


Melt the chocolate in a bain-marie and mix well with the 25 ml of olive oil.

Separate the egg yolks from the whites, mix the sugar with the yolks and beat.

Add this mixture to the melted chocolate.

Beat the egg whites until it gets stiff and slowly add the other mixture.

Pour the mousse into dessert pots or a big bowl and store in the fridge for 1 or 2 hours.

Suggestion: Before serving, pour a few drops of olive oil
