Cópia de Chickpea curry – Energy and flavour!

This is one of the most delicious, aromatic and healthiest dishes i know. And you can do it fast and with lots of different vegetables, just use your imagination.



Ingredients

1 onion

2 garlic cloves

4 or 5 ginger slices

3 ripe tomatões

1 small curgete

1 carrot

Curry

Curcuma

Black Pepper

1 small chilli Pepper

500g of chickpeas

200ml coconut milk

Vinegar or limon juice

Salt


Procedure

Cook all the vegetables finely chopped with olive oil. Cover with th lid so they can sweat – 10 min

Ad the spices and wait 5 min more.

Ad the chikpeas and the coconut milk and cook for more 15min.

In the end poor somesalt and lemon or vinagre, so you can balance the sweet flavour of the coconut milk.


Serve abundantly with basmati rice ( 2 meausures of water for one of rice). Finish with Facetas olive oil, it goes great with the dish.
